Hot Cocoa Recipe … What type of cocoa powder? 10-12, 20-21, medium, dark, extra dark brown? .. Confusing!?
I have a recipe like I use for holiday presents this year. I make homemade hot cocoa and homemade marshmallows. The recipe calls specifically for Dutch Process cocoa powder. I have seen anywhere in the city and can only be found natural cocoa powder. So I searched online and found a good site for buying a decent price Cocoa powder, but there are so many possibilities! light, medium, dark … I think that speaks the level of alkaline in cocoa powder 10-12 or 20-21 … the amount of fat Is someone who knows what they are talking about help me out here … thanks! Sun 10-12 is best for hot cocoa, it is more soluble by with less fat … right? I will with Dutch cocoa, no matter what is any better hot chocolate than what the store … it is a smoother, less acidic flavor. If you do not directly answer The question I actually asked, then no answer is required.
